Alcohol

Hello,
I am converting to Sikhism and have some questions about alcohol.
I live in France and the specialty is that we eat beef bourguignon: it's beef with vegetables and a wine sauce. I know you're going to tell me that you should not eat meat, but that's not my question. If it is boiled, the wine will boil. If the wine no longer contains alcohol, can it be consumed?
I also have another question. I often eat already prepared dishes bought in stores. When we look at the ingredients used, most of the time we can read that there is alcohol in it. I thought I had found a solution; buy halal dishes, but this is contrary to Sikhism. Is it bad if I eat those dishes that contain alcohol, even if there are not many?
My last question is whether or not we can consume balsamic vinegar: "vinegar is acetic acid, the degree indicated on the bottle - between 4 and 6 ° - therefore concerns the acetic and non-alcoholic degree.
The marketed vinegar contains only traces of alcohol - with the exception of some vinegars made from liqueur wines (sherry) that titrate up to 3%. "
